I have to say that it’s both incredibly difficult to find new keto appetizers as well as a variety of uses for bacon cups. Even a quick pinterest search shows most people just making the same thing and today was one of those days where I needed something new and delicious to bring to book club! Being the only keto person there I always enjoy the challenge of making something that everyone might enjoy. Let’s just say that after trying one I was tempted to just say that I had forgot to bring something because they were that good!
These are both crispy and creamy and are surprisingly filling. A few weeks ago I discovered lime relish at our grocery store and decided to give it a try. On salmon, in alfredo on zoodles… and I was curious about how it would be with bacon. Let’s just say it’s pretty much amazing. These yummy crowd pleasing appetizers only took about 25 minutes total to throw together and I promise I wont tell if you don’t share. It can be our little secret.
What’s your favorite thing to use a bacon cup for?
Curry Lime Bacon Cups
24 strips of Bacon
8 oz Cream Cheese
1/4 tsp Lime Zest or 1 tsp Lime Relish
1 tsp Curry powder
1 dash Salt
1 dash Pepper, black
1/8 tsp Garlic powder
1/4 cup Spinach chopped
Preheat your oven to 400F
Take a mini muffin pack and place it upside down on a cookie sheet.
12 strips of raw bacon you will cut in half and place crossing over each other on top of the muffin cup so that it covers the bottom of the cup and comes all of the way down. Then place a full bacon strip wrapped around the cup to seal it in. It’s best to cover every other one so that the bacon doesn’t attach to different cups.
Bake in the oven for 20 minutes or until desired crispness.
Let bacon cool for a couple of minutes and remove from the muffin tin. Let cool completely before filling.
While the bacon is cooling soften the cream cheese. Mix in all other ingredients until smooth. You can replace the lime zest with lime relish as well to add some extra flavor and adjust which curry powder you want to use. I used a regular yellow curry powder.
Once the bacon has cooled fill the cups and sprinkle with chopped chives or green onions.
