Low Carb Eggnog

The holidays can be the hardest part of being on a ketogenic or low carb way of eating. Every party and family gathering has traditional treats and it’s all out on a beautiful display loaded with warm cozy memories. Eggnog is one of those for me.

I love to turn on Hallmark and watch Christmas movies sitting on my couch next to my fire drinking eggnog and somehow it just doesn’t feel like the holiday season has started yet until I get to do this.

Growing up I always hated homemade eggnog’s. They were too strong. Even store bought I would dilute with milk! I know, I’m odd. Then I found this recipe. I literally struck gold. It’s crazy easy and takes about 5 minutes to throw together from start to finish. It’s not a huge batch but it’s perfect.

Intoxicated on Life had a simple recipe that I tweaked a bit to make just right for my taste. I personally use Pyure as my preferred sweetener but you can use any keto friendly sweetener that you like.

Keto Eggnog

1/2 pint heavy cream
2 eggs (yolks and whites divided)
1/8 cup Pyure (or according to taste)
1 teaspoon nutmeg
1/2 teaspoon vanilla
dash of cloves
dash of cinnamon

  1. Mix egg yolks until they are lighter in color.
  2. Add all other ingredients excluding egg whites and mix well.
  3. Whip egg whites until they form soft peaks and fold in with the rest.
  4. Pour into a glass and serve!
